omg i make the bestest grilled cheese sammiches evar. i call them Mosty Toasties. i use butter in the skillet, and fry one side of each slice, then flip them and add the cheese (makes it extra crispy that way). and i always put pepperoni inside. then once you join up the two slices, you need to keep adding more butter to the skillet, so that it frys, then re-soaks, and then gets crispy all over again. i swear to god, clogged arteries are totally worth the end product :)

This is similar to my method, except I usually only do 3 of the 4 total sides, since I'm lazy and it streamlines construction

Use a bit of ricotta as a spread, and toast it in the oven. ricotta gives a very nice compliment to cheddar or jack cheese.
